Delicious Chocolate Waffle Cookies
Most of the cookies I love to make are cookies I have been making since I was a little girl. This recipe came from a neighbor. I loved cooking so much and so at the age of 10 I made a recipe book. It has pictures of everything I loved in there… my favorite hockey team, favorite actors, but most of all my favorite recipes. I still have that book and use it today.
This is a fun recipe and easy to make. It makes about 2 dozen cookies.
Chocolate Waffle Cookies
Preheat Waffle iron to Medium setting.
In a medium sauce pan, melt 2 sticks of butter and add:
6 tbsp cocoa
Remove from heat and add:
4 eggs
1 ½ cups sugar
1 tsp vanilla
1 tsp salt
2 cups flour
1 cup of chopped walnuts, if desired
Mix well and drop by teaspoon onto preheated waffle iron. Put one teaspoonful into each section. Do not overcook. Remove and frost while hot.
Frosting:
In a medium saucepan, melt 1 stick butter
Then add:
2 tbsp cocoa
6 tbsp water
Bring to a boil. Remove from heat and add:
3 ½ cups powdered sugar
1 tsp vanilla
Spoon frosting over cookies while frosting is still warm.
